And then I made scallops, quinoa and kale for dinner. I must say, quinoa has an odd texture. I was expecting it to be more like couscous, but it’s lighter than that. It’s one of those sneaky foods that fills you up really quickly. And no, I did not eat all of these scallops!
My mom came in to hit up the San Gennaro Festival with me today, and we stopped at a place in Little Italy called Lunella for lunch. Yes, I really passed up pasta for some chicken and spinach. (Mostly because of how sick to my stomach I was last night, but that’s neither here nor there…) My mom wasn’t crazy about her baked zori, but my chicken was melt-in-your-mouth tender.
