Reader E-mail: Sweet potato recipe

This e-mail is from reader Caroline, who was in the Junior League of Washington and played tennis with me:

I noticed that you love sweet potatoes, so I wanted to share this great recipe for Fajita Sweet Potatoes with you. If possible, I try to use organic fajita mix from Whole Foods. Some fajita mixes have a little bit of brown sugar in them, but they are low on the ingredient list and I don’t think it makes a huge difference. I’ve also tried making my own fajita mix with spices, but haven’t found the perfect blend yet. Enough babbling, here is the recipe:

  • 1 sweet potato
  • 1 tablespoon fajita seasoning
  • olive oil to coat (i use less than a tablespoon).
  • Cut potato into pieces, toss with olive oil, toss with seasoning. Bake at 375 for 35-40 minutes.
