Get the Most Nutrition from Your Veggies

My readers and family know me so well! Both reader Jackie AND my uncle Joe sent me this story from NPR on getting the most nutrition from your veggies. I’d recommend listening to the whole piece, but if here’s the bottom line:

  • Add a little (healthy fat) to your veggies for better nutrient absorption.
  • Chopping veggies into smaller pieces can also help absorption, as can cooking certain veggies, like carrots. Microwaving, contrary to popular belief, helps food retain its antioxidants.
  • Eat a colorful mix of veggies.

The adding fat to your veggies is something Joel told me a long time ago, but I’ve forgotten to incorporate, other than salads. The microwaving tip also seems counterintuitive, but great!
