It’s easy to stay healthy when you’ve planned your meals. When you haven’t? Sometimes that’s a different story. In NYC, it’s plenty easy for me to just run out to Pump or grab a salad somewhere. (Not that I do, I’m not really a salad person.)

But when I realize how much money I’ve been spending on quickie lunches, I sometimes am a bit appalled at myself. Today, I said to myself, “Surely you can find something in this kitchen you can eat for lunch.” And I did. A salmon burger, quinoa and edamame. The salmon burger, from Whole Foods, is ridiculously delish and took about five minutes to heat up in a pan with a bit o’olive oil.
