In NYC, it is so easy to be lazy with your cooking. Step outside and you can get anything you want instantly. Or, even easier, make a phone call and you can have whatever you want delivered. Sometimes it takes more willpower to just make your own damn food than it does to eat the healthy stuff.

I woke up this morning and was thinking about an iced coffee and veggie flatbread from Dunkin’ Donuts, but decided that was a waste of time and money and made some oatmeal with Greek yogurt, berries and sunflower seed butter.

If you shy away from steel cut oats because you think they take too long to make, try making them in the microwave. You’ll need a big container so that the oats don’t bubble over. Put your oats (I do 1/4 cup) and water (3/4 cup) in the container, cover it with some paper towel (ghetto-style!) or a lid (resting on top of it, not closed). Cook for 3 minutes, stir, and then cook for 2-3 minutes. The container will be really hot, so give it a minute or two to cool down.

Warning: this is sort of a crapshoot. Sometimes this works magically, sometimes the oats explode in the microwave and sometimes they’re gooey. But it works more often than not!
