I moved into my new apartment about three weeks ago, and I can count on one hand the number of times I’ve made a real meal in my new kitchen. Granted, I was away for about a week, but still. Every single paycheck, when I see how many times I spent $5-12 on a meal, I vow to cook more and get less takeout.
I went to Trader Joe’s the other day, and my kitchen is relatively well-stocked. It’s time to cook. I tweeted, asking if anyone had any favorite recipes lately, and Diana tweeted back:
She’s hosting an Eat In Month Challenge on her blog. I tweeted back that I didn’t know if I could, or wanted to, commit to eating every meal in. (I’m single, and I live alone—meeting people for dinner is one of my favorite things to do!)
While an entire month is a little overwhelming, I’m going to take this week by week. For the upcoming week, I vow to take breakfast (likely oatmeal) and coffee to work four times and to take lunch four times. I am busy after work Monday – Wednesday nights, so I’m not making any promises there.
