Eat in More Challenge

[Also known as Be More Awesome challenge.]

Last month, I decided to take Diana’s Eat in Month challenge, except I altered it a bit to suit my own needs, and I called it the Eat in More challenge. While I failed miserably at the actual challenge, since then, I’ve been challenging myself to eat in more. Not eat every meal at home, or even some percentage–just more than usual (which, um, isn’t hard). I do enjoy cooking when I have time to do it, but for me, it’s a matter of making the time.

I get really busy and think I don’t have time to cook or prepare food. But it doesn’t have to be anything fancy, it just has to be what works for me. Caitlin posted last night that if she knows she’s going to be too busy or tired to cook, something like a frozen pizza or some ravioli are things she can cook quickly and save money, rather than spending money on takeout.

As a busy single girl, I need to realize the same thing and think a bit more about what are some dead-easy (but still tasty!) meals I can pull together after getting home late from a Junior League meeting, the gym, or drinks with friends after work.

Last night, I was lucky enough to still have some leftover risotto, and I sauteed up some spinach and onions to serve over it and added a turkey sausage.

After preparing 15 of my last 16 meals myself, it’s definitely takeout time for lunch.

  • Have you ever attempted roasting a whole chicken? It's surprisingly easy, and you can eat off the leftovers for a week in a million different ways--on salads, in quesadillas, in soup, whatever. I love it.

  • I love doing quesadillas, peanut butter banana and chocolate chip sammies, and/or egg scrambles as my quick go-to meals so that I'm not eating out too much!

  • I love have a few go-to meals on hand. Some of my favorites are black bean quesadillas, egg scrambles, and banana peanut butter sammies.

  • Thanks for the shout out! I really love how you adapted the challenge to fit your own lifestyle. It's great that your modified challenge is helping you eat in MORE. Go you! :) One of my favorite quick-to-make meals is a noodle stir fry. Ive done lots of variations and they're so easy to change up and even easier to cook! I can usually have them done in about 15-20 minutes. Let me know if you want a recipe or two. Happy eating in! :)
