For this weeks’s Soy Simple post, I was asked to recreate a holiday meal with soy.
I was planning on making Brussels sprouts with bacon and maple syrup as a part of Christmas Eve dinner, so I decided to make an easy substitution: tofu bacon for regular bacon. I used Morningstar Veggie Bacon strips with soy. Otherwise, I followed the original recipe. I tasted while cooking, obviously, and the maple syrup definitely helped absorb any of the soy taste.
Let’s see how the fam reacts tomorrow… I hope nobody is reading this. I’d like to trick them and see what they say.

I used tofu to make a cream sauce for pasta. Hopefully my family will be converted to loving tofu as much as I do :-)

I will probably do a risotto with tofu bacon/eggplant and zucchini at our Christmas dinner. Lets see what the meat lovers will think!

I'm my family's official "layered salad-maker" for our Christmas get-togethers. I make one w/ "real" bacon and one w/ soy crumbles for the vegetarians in our family. Even the meat-eaters like the one w/ soy crumbles. =)
those brussel sprouts look great! i had tofu and green beans with peanut sauce tonight.. heavenly!
Ok so it's just me but I've been making breakfast by mixing some tofu in with my scrambled eggs in the morning. I usually use it for dinner with stir fry or bbq tofu and like to mix it up by having it for breakfast--it's light and all the protein fills me up!
I use soy milk to make power smoothies for my boyfriend and I in between family gatherings so we keep our energy up and try not to binge on all the holiday decadence!
I used turkey bacon instead of pork bacon in brussel sprouts over Thanksgiving and the family definitely took note, although they were polite/humorous about it. I'm making a different brussel sprout recipe for Christmas but it involves real bacon! I personally think turkey bacon is delicious though. I haven't tried veg bacon. Good luck, I'm a bit cynical so I'm guessing your fam will prefer the real bacon, but maybe they won't say a word!

Soy egg nog. That's not really cooking tho.
I use soy milk in the mashed potatoes! Unflavored, unsweetened does the trick.
