Cooking for Bloggers

After this morning’s race, I had a bagel with cream cheese and almond milk latte from Whole Foods and then spent the afternoon cleaning up my apartment and relaxing.

Tina’s hotel was doing the free happy hour again, so I met her for a glass of wine before dashing out to Whole Foods to pick up ingredients for dinner with Tina, Ali, Gabriela and a quick visit with Heather. I used to be really nervous to cook for other people. I thought I was a terrible cook and my friends would go home and talk to each other about how crappy my cooking was.

I’ve gotten over that recently and now enjoy cooking for people. I’ve learned a lot more about cooking and I can take pride in it now. But cooking for other people that blog about food is a little nerve-wracking, still. So I kept things simple.

And the main course: whole wheat shells, spinach and turkey sausage. I’d wanted to make this orecchiette with broccoli rabe, but Whole Foods was out of broccoli rabe, so I found this recipe with substitutions. (Gabriela’s version had tofurkey sausage.)

I love blog friends, and I love sleep. I think I’m going to sleep like a baby tonight.

Coconut Curry-ish Shrimp Rice

You guys, I made magic in the kitchen tonight.

And then, I cooked.

This afternoon at work, I realized I had to plan for a meat-free dinner tonight, since it’s Ash Wednesday. I knew I had a bag of shrimp in the freezer that I could use, but I knew I wanted to do something different than stir-fry or pasta, my two usual fallbacks. I remembered my coconut curry chicken and knew I wanted to do something like that. After spin class, I came home and got to work. I thawed the shrimp and then sauteed them with some coconut milk, kale, broccoli and carrots. I couldn’t find my curry paste, so I omitted it and just used some cayenne, cilantro and lime juice. I cooked up a 90-second rice packet and then threw it in with everything else.
