Ham, steak, salad, a spoonful of mashed potatoes, carrots and pierogies. I also had a sweet potato and quite a few bacon-wrapped scallops and pigs in a blanket. I had a Dunkin’ Donuts flatbread after church this morning, because I knew that I’d be starving if I waited until Easter was served.

The salad, which I made, is spinach with goat cheese, dried cranberries and a balsamic vinaigrette.

Last Easter (yes, even a few months into this healthy journey…) and Easter 2007, I remember eating so much that I was absolutely sick to my stomach. Last Easter was particularly terrible. I had planned on getting a ride to Hoboken and hopping on the PATH from there. I was so sick that I had to make pit stops twice between Franklin Lake and Hoboken and then lie on my friend’s couch in Hoboken until I felt well enough that I thought I’d make it home. And then I ended up taking a cab (ugh) from Hoboken back to NYC. That feeling was enough for me to vow to never feel like that ever again. I definitely ate stuff I don’t usually eat today, but I paced myself.
