Theodora’s Lazy Protein Pancakes!

So, clearly, I love pancakes (um, this amazing place? Two towns over from my parents,) but I also love being healthy. Surely the two didn’t mutually exclusive.

I’d read about protein pancakes, and I was curious to try them. I googled around, and all the recipes included baking powder; my pantry did not. I’d read that forgoing the baking powder would only make the pancakes a bit flatter…so without further ado, here’s my recipe for Theodora’s Lazy Protein Pancakes:

  • 1 cup whole wheat flour
  • 1 scoop protein powder
  • 1 TBSP sugar (I used Stevia)
  • 1 pinch salt
  • 1 egg
  • 1 cup soy milk

They’re ridiculously easy to make. Mix the dry ingredients together. Beat the egg, then add in the milk slowly. Stir the wet ingredients slowly into the dry ingredients. Pour the mix into a lightly oiled or buttered frying pan, and cook like you would cook regular pancakes. (I didn’t do so well on the actual *cooking* part — mine ended up sticking to the pan.) Add your favorite toppings — I added sunflower seed butter and a bit of straight up regular butter.
