These past few mornings, I’ve been rocking pumpkin oatmeal. Originally inspired by something I read on Kath’s blog, I made my version with:

  • 2 cups of steel cut oats
  • 2 cups almond milk
  • 2 cups water
  • 1 can pumpkin

In the middle of the night, I put some pumpkin spice in. (Some people sleep-eat; I sleep-season.)

I put it in the crockpot overnight and woke up to a sweet pumpkin smell. However, when I got to work, I realized it was kind of dry. I added some banana and sunflower seed butter. Next time around, I think I’ll add both more liquid and more pumpkin. But it wasn’t bad!

I did not hit the snooze button. It pains me to break up with my BFF, Mr. Snooze Button, but I hope it will be for the better.
